Wholemeal couscous is made from the cracked grains of durum wheat. It has more fibre and nutrients than regular couscous, making this a superstar ingredient to add to salads and as an accompaniment to many dishes. To cook, simply fry in oil for 2-3 minutes before boiling. Once the water is fully absorbed, simply take off the heat and fluff up with a fork. Voila!
