These tasty green lentils are from the Laird variety and are super-simple to cook. There’s no need to soak them, simply cook in hot water for 25 minutes so they go lovely and soft.

Green lentils can be used in all sorts of dishes. Toss them up in to a healthy salad or create a spicy dhal to accompany curries.
