Often hailed as the kitchen superhero, allspice comes as a small, dried berry and is named because it has the aromas of nutmeg, cinnamon, ginger and cloves. It is not, as some may believe, a mixture of all of these spices combined together. It’s often known as pimento because it comes from the Pimenta diocia, a tree grown in South America, and looks like a small, brown peppercorn. It’s delicious in Caribbean, Latin American and Middle Eastern dishes, as well as stews and gingerbread.
